The BBQ legend. Brisket is famous as the showpiece cut for slow-smoked Texas bbq. But it is also known for slow roast in Jewish cuisine. It is also used for corned beef and pastrami. For corned beef it is brined then roasted. Pastrami is brined and smoked.
If you're into it we can get you a full "packer" brisket... these briskets are "supermarket" briskets which are actually half the full brisket cut. (I.e. we are selling 4 to a cow not 2 to a cow.)
